My good friend Alex owns my favourite Chinese restaurant in Geelong and he taught me that 2–3 day old steamed rice works best in stir fries. So when you get a few spare minutes, grab the rice cooker out of the cupboard and steam up some rice. Let the rice cool down before popping it in an airtight container and then into the fridge so that it’s ready to go when you need.

oyster sauce

carrot, cut into match sticks 1 red capsicum, diced

broccoli florets

snow peas, trimmed

Directions
Heat the vegetable oil in a wok or saucepan over medium heat.
Add the garlic and onion and cook for 2 minutes to soften. Once the onion starts to become transparent.

Add the steak and stir.
Cook for around 1–2 minutes – as soon as the steak strips start to sear add the sauces, followed by the veggies.

Cook for 2–3 minutes
Then remove from the heat. Remember, the thermos will continue to cook the food till lunchtime so don’t stress if you think the veggies or protein are a little undercooked.

Heat a cup of steamed rice in the microwave till it’s scorching hot, about 90 seconds should do it.
Add it to the base of the thermoses and then add the stir-fry. Remember to pour in the sauce that’s left in the wok or pan as the rice will absorb it all. Pop on the thermos lid.
