Cheeseburger Skewers

These Cheeseburger Skewers are pretty much all about the assembly. You’ll need three of my Italian Meatballs (page XX) for this recipe. Let’s go.

TIPS
Be sure to snip the points off the wooden skewers with some scissors so that the little peeps don’t accidentally stab anyone with them.

Gluten free
Use gluten-free breadcrumbs in the Italian meatballs and your favourite gluten-free buns.

Dairy free
Opt for plant-based parmesan in the meatballs and use plant- based cheese slices instead of the tasty cheese.

Fussy eaters
Some kids are funny about onion, this recipe has a little bit of red onion in it but you can skip it if your life is controlled by small humans. You could also lose the pickles if it’s likely to offend.

brioche hamburger buns 6 small wooden skewers

Italian Meatballs, halved

tasty cheese, each cut into 4 squares

dill pickles, sliced length- ways

Special Sauce

2 tablespoons mayonnaise
1 teaspoon mustard
1 teaspoon tomato sauce
1 teaspoon finely chopped red onion

Ingredients

tasty cheese, each cut into 4 squares

dill pickles, sliced length- ways

Special Sauce

2 tablespoons mayonnaise
1 teaspoon mustard
1 teaspoon tomato sauce
1 teaspoon finely chopped red onion

Directions

Let’s create the special sauce.

Mix the mayo, mustard, tomato sauce and onion in a cup or small mixing bowl. Season to taste if you like, but I prefer to keep it as is.

Use a small cookie cutter or espresso cup to cut a couple of circles from each brioche bun.

Now use a bread knife to cut the bun circles horizontally to create mini brioche hamburger buns. Spread a teaspoon of the special sauce on the base only of each mini brioche bun.
Mark as complete

Thread a mini brioche base onto a skewer followed by half a meatball

Then carefully slide on four square slices of cheese and half a pickle. Finally, thread on a mini brioche bun lid. Repeat to make six skewers.
Mark as complete

Place three skewers in each lunchbox.
