Chocolate Protein Balls

Goodness gracious, great balls of fire … these are next-level. Throw away the lunchboxes because these are going straight down the hatch. Yep, trust me on this one. I’ve made these a dozen times and each time they’re demolished. With that in mind, I recommend you make two batches of these. You’ll thank me and so will the kids.

 

TIPS
• These will keep for 4–5 days in an airtight container in the fridge.
• Remember to make sure your kid’s school allows nuts before packing these in the lunchbox.

Use gluten free oats.

unsalted macadamia nuts
350 ml
oats
237 ml
almond butter
45 ml
chia seeds
30 ml
maple syrup
5 ml
vanilla extract
15 ml
cocoa powder desiccated coconut, for rolling

unsalted macadamia nuts
1 1/2 cups
oats
1 cup
almond butter
3 tablespoons
chia seeds
2 tablespoons
maple syrup
1 teaspoon
vanilla extract
1 tablespoon
cocoa powder desiccated coconut, for rolling

Directions

First, we need to smash the macadamia nuts into little pieces.

The best way to do this is after you’ve asked the kids 100 times to do something and they still haven’t done it – anger and stress release. Pop the macadamia nuts in a ziplock bag, expelling as much air as possible, and seal the seam. Cover the bag with a tea towel and bash the living daylights out of it till the nuts are crushed to your desired size (we don’t want to make macadamia butter so chill out a little with the bashing).

Place the macadamias in a mixing bowl.

With all the remaining ingredients except the desiccated coconut and stir until well combined.

Now it’s time to get your hands dirty.

Start rolling the balls to whatever size you like. (You can even make one massive ball so that when you eat it all you can comfortably say you only had one …)

Put some desiccated coconut in a shallow bowl.

Then roll the balls in the coconut to coat them. Transfer the balls to an airtight container and refrigerate.

Pop two or three of these in the lunchbox for a snack.
