Date and Almond Bliss Balls

These healthy energy balls are perfect for a mid-morning snack – and pure bliss for parents who don’t want their kid binging on sugar and salt. The fact that they use just four ingredients makes them even more awesome.

 

TIPS
• These balls keep for 5–7 days in an airtight container in the fridge.
• Remember to make sure your kid’s school allows nuts before packing these in the lunchbox.

Directions

First thing’s first, we need to soften the dates.

The best way to do this is to put them in a heatproof bowl and cover them with boiling water. Let them sit for about 20 minutes. Drain the dates and drop them into a food processor with the remaining ingredients. Blitz until all the ingredients are combined.

Use a tablespoon to scoop out some of the mixture and with wet hands roll it into a ball.

Once you’re happy with the shape, drop the ball into the desiccated coconut and cover it up so it looks like it’s covered in snow.

To help them set

Pop them in an airtight container and straight into the fridge for a few hours. (However, you can eat them straight away so there’s no need to wait that long …)
