This is my daughter Kiki’s version of the Macedonian hit salad, shopska salata. The traditional version uses brown onion, but Kiki prefers red onion.

TIPS
Kiki makes this directly into her lunchbox (she hates cleaning up).

Dairy free
Use your favourite vegan feta.

Vego/vegan
Use vegan feta in place of the regular feta.

Fussy eaters
Mild cheese like bocconcini would work for this recipe instead of the feta.

When Kiki makes this salad she insists on absolutely no help at all.

It’s not always perfect, but the taste is always amazingly awesome.

Sometimes she mixes the feta through the whole salad, other times she mixes the other ingredients together then puts it on top.
