Kiki’s Tuna Mayo Mix

Do your kids get bored of having the same sandwich fillings day in day out? Kiki, my youngest, asked me to get creative with tuna.
This fun sandwich fil an be added to any wrap, sandwich or salad mix.
It is super healthy and so easy to make that these days Kiki makes this one for herself.

Tips:
This tuna mix can be added to a roll, sandwich or wrap. You can even use it in a California roll.

Gluten free
Make sure the mayo is gluten-free if your kids have intolerances.

Egg free
Egg-free mayo is readily available at supermarkets and works well here.

Fussy eaters
Swap out the red o onion for spring onions or chives for a milder taste.

2 x 95 g
cans of tuna (in springwater)
118 ml
mayonnaise 1/4 red onion, finely diced
59 ml
finely chopped flat-leaf parsley leaves

iceberg lettuce leaves, washed and dried

1/2 cup

Directions

Put the tuna (it’s OK if some of the springwater goes in), mayo, red onion and parsley in a mixing bowl and give it a really good stir with a fork – you want the tuna to be completely covered in the mayo.

Mark as complete

Line up your lettuce leaves so that they serve as cups, placing them directly into the lunchbox – I use four lettuce cups for each serve. Divide the filling between the lettuce cups and pop on the lid. It’s as simple as that.

Pop the lunchbox into a cooler bag with an ice block.
