Mango Turnovers

These sweet delights are super easy to make and don’t have any added sugar. This recipe was invented one day when my girls wanted something sweet and all I had was a mango and frozen puff pastry. We’ve all heard about apple turnovers, so I thought I could make a mango turnover. The result was awesome and it’s now become a regular lunchbox addition.

TIPS
This recipe can be used to create delicious fruit turnovers with whatever lovely fruit you have to hand – apple is especially good.

Gluten free
Use gluten-free frozen puff pastry.

Vego/vegan
Many brands of puff pastry are suitable for vegans but be sure to check the ingredients list for palm oil, which some vegans choose to avoid.

Directions

You can cook these turnovers in an air fryer or the oven.

If cooking in the oven, preheat to 180°C. Line a baking tray with baking paper.

Peel the mango and slice it up.

Now we have to score a section of each pastry square.

On the right side of each square, score (being careful not to cut through the pastry) horizontal lines about 1 cm long from the middle of the pastry to the right of the pastry stopping 1 cm short of the edge. Score like this all the way from the top to the bottom of the square.

Now on the left, unscored side of the square, add the freshly cut mango and load it up.

Fold the scored side over the mango and push it down along the edges. You can neaten up the edges by trimming them with a knife.

Cook the mango turnovers in the oven for 25 minutes, or until golden and the pastry has risen.

If using an air fryer, cook at 180°C for 15 minutes.

The end result looks amazing. These are awesome in the lunchbox or for an after-school snack. Enjoy!
