Mini Roast Chicken Tacos

Tacos are always awesome. And this lunchbox regular makes them even awesomer! They’re great on a platter at a kid’s party too (and when I say kids, I mean those aged between 3 and 83).

Gluten free
Gluten-free flatbreads are always a great sub for standard flatbreads.

Dairy free
Substitute the grated cheddar with a plant- based cheddar and use a plant-based yoghurt.

Vego/vegan
You can always swap out the chicken for beans – supermarkets stock a Mexican
3-bean can, which would enhance the Mexican vibe.

Fussy eaters
Let fussy little peeps assemble their own taco to give them a sense of ‘I made my own lunch’
– this worked a treat for my former fussy little human.

flatbreads or tortillas

smoked paprika

grated cheddar

avocado, finely sliced

tomato, finely sliced

shredded roast chicken
45 ml
natural yoghurt
Small handful of coriander leaves (optional)

smoked paprika

grated cheddar

avocado, finely sliced
1/2
tomato, finely sliced
1/2 cup
shredded roast chicken
3 tablespoons
natural yoghurt
Small handful of coriander leaves (optional)

Directions

You can cook these tacos in an air fryer or the oven.

If cooking in the oven, preheat to 180°C. Time to get the muffin tray from the cupboard and turn it upside down.
Mark as complete

Use a round cookie cutter or a glass to cut four or five circles from each flatbread.

Fold them into a taco shape, place them in the valleys of the muffin tray and sprinkle with the smoked paprika. Smart, hey?

Pop the tray in the oven for about 8 minutes – you just want the shells to harden up enough that they maintain the shape.

Take them out and let them cool down. If using an air fryer, cook at 180°C for 4–5 minutes.

OK, now comes the assembly.

Place the cheese on the bottom of the mini taco, then add the avo, tomato, chicken, a dollop of yoghurt and a coriander leaf (if using). To finish off, squeeze a little lime juice on top.

Place the mini tacos side by side in the lunchbox so that they fit nice and snug.

Pack the lunchbox inside a cooler bag with an ice block to keep the temp of the chicken below 4°C.
