Moreish Haloumi Cannoli

Puff pastry to the rescue! The beauty of making these the night before is that the pressure is off in the morning. I recommend making a few extra as you won’t be able to go to bed without eating a couple.

TIPS
• Add a little salad on the side for extra points.
• FYI, these cannoli make terrific finger food for parties. If you want to take them in a sweet direction, drizzle with a little honey after you’ve taken them out of the oven.
• Soaking the haloumi in water for 5–10 minutes reduces the saltiness of the cheese.

Gluten free
Use gluten-free puff pastry, which is readily available in supermarkets.

Egg free
Replace the egg wash with your milk of choice to brush over the cannoli.

Vego/vegan
Omit the prosciutto or replace it with asparagus to make these vegetarian.

Directions

You can cook these cannoli in an air fryer or the oven.

If cooking in the oven, preheat to 180°C. Line a baking tray with baking paper. Cut the pastry sheet into six rectangles. Slice the haloumi into six rectangles half the size of the pastry.

To make the cannoli, place a rectangle of puff pastry on your benchtop.

Now place the prosciutto, then the haloumi on top of the pastry. Carefully roll the pastry up on the diagonal – when you’ve finished rolling, the prosciutto and haloumi should be partially exposed. Squeeze the ends of the pastry onto itself so it sticks together.

Repeat to make all the cannoli and place them on the baking tray.

Brush the cannoli with the egg and sprinkle the sesame seeds on top.

Pop them in the oven for 10–12 minutes, or until golden brown and the haloumi is oozing. If using an air fryer, cook at 180°C for 12 minutes.

Pop two or three cannoli into each lunchbox.
