No-Meat Balls (Thanks, Waz!)

Meatballs are awesome, and these no-meat balls are just as awesome. I originally came up with this recipe for my best friend, Warren Freeman, who is vegan, but it turns out these no-meat balls are perfect for the lunchbox. Making these the night before is the key to a smooth morning.

 

TIPS
Once cooked, these beef patties will keep for 3–4 days in an airtight container in the fridge.

To keep the food nice and hot fill a thermos with boiling water and close the lid so the internal lining of the stainless steel heats up. Let it sit for 10 minutes before replacing the hot water with the hot food.

Directions

Heat the oil in a frying pan over medium heat.

Add the onion and cook for 3 minutes, or until translucent. Add the mushrooms and cook for 8–9 minutes, until darkened, then drop in the garlic, rice, oats and salt and give it a really good stir. Add the maple syrup and stir it through for a minute or two before removing the pan from the heat.
Mark as complete

Transfer the mixture to an ovenproof bowl and use a handheld blender to blitz it for around a minute. Cover the bowl with foil and pop the bowl in the fridge for 30 minutes.

Preheat the oven to 180°C and line a baking tray with baking paper.

Once chilled, use a tablespoon to scoop out the mixture and roll it into golf ball–sized balls with your hands.

Pop the balls straight onto the baking tray and cook for 5–7 minutes, then turn them over for another 5–7 minutes. They will be the colour of cooked meat when ready. You can also cook these in an air fryer at 180°C for 12 minutes, turning just once after 6 minutes.

You can serve these with Italian Tomato Sauce. Drop the no-meat balls directly into the sauce.

In the morning, reheat the balls with the sauce in the microwave for 2 minutes. Place five balls per child into a preheated thermos with the sauce.
