Panko-Crumbed Tuna Balls

Goodness gracious, tuna balls to the rescue. Tuna is an amazing source of protein, but the flavour isn’t for everyone. It took a while to get my girls into it, which is why I’m sharing this gateway recipe with you peeps. This recipe has a slight Asian vibe, but remember you can vibe with any combo you like.

 

TIPS
Once cooked, these tuna balls will keep for 2–3 days in an airtight container in the fridge.

Gluten free
Use gluten-free breadcrumbs.

Fussy eaters
If you want to simplify the flavour of these tuna balls, simply omit or reduce the quantity of lemongrass.

sesame oil

panko bread- crumbs

tuna in spring- water, drained

Ingredients

1/2 cup
panko bread- crumbs
2 x 3.35 ounces
tuna in spring- water, drained
1 tablespoon
finely sliced spring onions

egg
1 tablespoon
soy sauce
1 teaspoon
finely chopped lemongrass stalk, white part only

Directions

You can cook these in an air fryer or the oven. If cooking in the oven, preheat to 180°C.

Grease a baking tray with the sesame oil. Sprinkle half the panko breadcrumbs on a plate.
Mark as complete

Place the remaining Panko breadcrumbs in a bowl, add all the other ingredients and mix well – I use a fork for this as it’s easy to scrape the edges of the bowl.

You’ll have to test the mixture to make sure it holds together – the best way I know is to use your hands and feel if it sticks well enough to create some balls. If it’s too dry add more egg, or if it’s too wet add more breadcrumbs.

Using your hands, roll golf ball–sized tuna balls. Now roll the tuna balls in the panko breadcrumbs to cover them, then place them on the baking tray.

Pop them in the oven for 30 minutes, turning once during cooking. They will be crispy and brown when ready. If using an air fryer, cook at 180°C for 20 minutes, turning once at the 10-minute mark.

Allow the tuna balls to cool prior to popping six in each lunchbox.
