This is my potato toastie: no bread required. Microwaved potatoes are used to create a brilliant take on a toastie, which I’ve renamed Postie! Warning: the smell of these is next-level.
TIPS
• If you want the postie to be warm in the kids’ lunchboxes, wrap the hot postie in foil.
• You could add a small tub of ketchup as a dipping sauce to go with the postie.
Dairy free
Substitute the grated cheddar with a plant-based cheddar.
Vego/vegan
Skip the salami and add extra diced vegetables for a veggie postie.
Fussy eaters
For a milder tasting postie, omit the salami and paprika.
Pop the potato in the microwave and cook on high for 8 minutes.
While your potato is in the microwave, fire up the jaffle maker or sandwich maker.
After 8 minutes in the microwave, test your potato.
Place half the potato on the bottom of your hot jaffle or sandwich maker to create a base for each of the two posties.
Pop the posties in the lunchbox hot or cold and wait for them to be devoured.
