This is my potato toastie: no bread required. Microwaved potatoes are used to create a brilliant take on a toastie, which I’ve renamed Postie! Warning: the smell of these is next-level.

 

TIPS
• If you want the postie to be warm in the kids’ lunchboxes, wrap the hot postie in foil.
• You could add a small tub of ketchup as a dipping sauce to go with the postie.

Dairy free
Substitute the grated cheddar with a plant-based cheddar.

Vego/vegan
Skip the salami and add extra diced vegetables for a veggie postie.

Fussy eaters
For a milder tasting postie, omit the salami and paprika.

large potatoes (any variety is fine), skin on, quartered

grated cheddar

green capsicum, diced

diced salami
5 ml
salt flakes
5 ml
smoked paprika

Directions

Pop the potato in the microwave and cook on high for 8 minutes.

Mark as complete

While your potato is in the microwave, fire up the jaffle maker or sandwich maker.

You can even use a sausage roll maker for these.

After 8 minutes in the microwave, test your potato.

It should be cooked through and mashable.

Place half the potato on the bottom of your hot jaffle or sandwich maker to create a base for each of the two posties.

Use a fork to push down on the potato to roughly mash it and spread it evenly across the base. Top the potato with the cheese, capsicum, salami, salt and paprika. Place the remaining potato on top and again roughly mash with a fork and spread to create a top later for your postie. Close the jaffle or sandwich maker lid and cook until the potato is nice and crispy and the cheese is melted – around 5–7 minutes.

Pop the posties in the lunchbox hot or cold and wait for them to be devoured.
