If you’ve never taken a Vegemite scroll to school you’re missing out on a great Australian culinary experience. There are so many variations of the Vegemite scroll, but I usually use wholemeal bread for this fun creation (you can use any bread that rocks your little peeps). A prerequisite for this recipe is to ensure that the Vegemite jar has a thousand crumbs inside it.

TIPS
• If you like, you can wrap the scrolls in foil so that they’re still warm for lunchtime.
• You can prepare these the night before, leaving them in an airtight container overnight. All you need to do is toast them in the morning and you’re done.
• Gluten free Gluten-free bread works a treat in this recipe.
Dairy free
You can also sub out the butter for a dairy- free butter.
Vego/vegan
Dairy-free butter is an amazing sub for real butter. For vegans, Nuttelex with coconut oil is a great palm oil– free option.
Fussy eaters
The shape is the key for this recipe – kids love fun shapes. You can use whatever fillings your little peeps prefer.

First, cut the crusts off the bread
Pop two bread slices on a chopping board side by side but overlapping by 1 cm.
Smear butter, then Vegemite, on the bread rectangles, making sure it’s evenly distributed between them.
Time to make the scrolls. Using both hands, lift the long side of a bread rectangle and firmly roll it up to look like a snake.
Now you’ll need to create the scroll. Starting at one end, coil the snake inwards to look like a large snail.
You can pack these scrolls in a lunchbox the way they are, no problem.
Remove the skewers before serving – the scrolls will hold their shape perfectly.
