Rice Paper Rolls

TIPS
• You can make these rice paper rolls the night before – they’ll keep stored in an airtight container in the fridge for 2–3 days.

Gluten free
Make sure you chose a gluten- free hoisin sauce, some brands use wheat as a thickener.

Vego/vegan
Make these vegan by using sliced tofu instead of the shredded chicken.

Fussy eaters
These rice paper rolls are perfect for fussy kids as you can so easily mix and match to suit their preferences when it comes to veggies. Sliced capsicum, green beans and snow peas all work really well, and omit the herbs if they are too strong.

Directions

Cook or soak the vermicelli noodles as per the packet instructions until soft but not mushy.

Drain well.

Next, grab a dinner plate or large shallow bowl and fill it with cool water.

Dip a rice paper sheet in the water for about 20–30 seconds to soften (check the packet instructions as the length of time may vary). As soon as the rice paper softens, put it on a moist tea towel and begin the wrapping.

Remember that the rice paper is transparent so it has to look good on the inside. Place the ingredients in the bottom third of the rice paper sheet closest to you, being sure to leave a nice clear border.

I like to start with the herbs, then I add the noodles, chicken, veggies and a drizzle of hoisin sauce. To roll, pull the rice paper edge closest to you up over the ingredients like a cosy blanket. Now fold the sides in nice and snug. Finally, roll the filling so that it becomes fully enclosed. It should be nice and tight and the wet rice paper will make it stick together. Repeat the process to make three more rolls.

Pack two rolls in each lunchbox inside a cooler bag with an ice block to keep the temp of the chicken below 4°C.
