Waffles for lunch? Yep, that’s what everyone says when I tell them
I make my girls waffles for lunch. Waffles don’t have to be full of sugar or covered in maple syrup and ice cream. I love making these savoury waffles because they’re a great alternative to bread and they’re super easy to make. I use a heart-shaped waffle maker, which adds to the fun.

 

TIPS
• If you want these to be warm in the kids’ lunchboxes wrap the hot waffles in foil.
• The batter for the waffles can be made the night before, however add an additional tablespoon of milk to the mix so it doesn’t become too thick overnight in the fridge.

Gluten free
Use gluten-free self-raising flour.

Dairy free
Sub in plant-based cheddar, milk and butter.

Fussy eaters
Feel free to adapt the veggies to suit your small person’s tastes.

Ingredients

red capsicum, finely chopped

yellow capsicum, finely chopped

finely diced brown onion

grated cheddar

Waffle Batter

237 ml
self-raising flour
237 ml
milk
20 g
salted butter, melted

egg
Pinch of sea salt

Ingredients

2 tablespoons
finely diced brown onion
1/2 cup
grated cheddar

Waffle Batter

1 cup
self-raising flour
1 cup
milk
0.7 ounce
salted butter, melted
1
egg
Pinch of sea salt

Directions

Turn on the waffle maker so that it heats up while you are preparing the waffle batter.

Mark as complete

Use a handheld blender or a protein/cocktail shaker to blend all the waffle batter ingredients till they’re all combined and almost thickshake-like. Set aside.

The waffle maker should be ready to go now, so add in the capsicum and onion and let them soften and sweat until they start to get a little colour, around 2–3 minutes.

Now add the cheese and let it melt a little, around 1 minute. Once you feel the vibe, pour the waffle batter on top of the cheese and veggies, being careful not to overfill. Cook for around 3 minutes, or until they’re slightly crispy and lightly golden.
Mark as complete

Remember that these are super hot and need to cool down a little before you let your little humans get to them.

These look awesome in the lunchbox and are a great way to sneak in veggies. They can be served warm or cold.
