Sweet Fruit Sticks

Fresh fruit on a stick is the best – but add extra vitamins in the form of homemade gummies and it’s next-level genius. I made these for my daughter Anela when she was little and she wouldn’t touch her vitamin supplements. The fruit gummies need to set overnight, so plan ahead when making them.

 

TIPS
• Vitamin powder is available at most health food shops. I use Melrose Health Super Green powder.
• Be sure to snip the points off the wooden skewers with some scissors so that the little peeps don’t accidentally stab anyone with them.

Vego/vegan
You can use agar in place of gelatine to make vegan gummies.

Gummies (Optional)

1 teaspoon melted coconut oil
250 ml (1 cup) cranberry juice
2 tablespoons gelatine powder vitamin powder (see Tip)

Ingredients

Gummies (Optional)

1 teaspoon melted coconut oil
250 ml (1 cup) cranberry juice
2 tablespoons gelatine powder vitamin powder (see Tip)

Directions

If you are making the gummies, you’ll need a mould or a small baking dish to pour the mixture into to set.

Brush the coconut oil over your mould or dish.
Mark as complete

Pour the juice and gelatine into a frying pan over medium–low heat and bring to a simmer, whisking constantly to dissolve the gelatine (and prevent it going claggy and lumpy).

When the gelatine has completely dissolved, remove the pan from the heat and whisk in the vitamin powder so it combines evenly. Very quickly, pour the mixture into the mould or dish. Pop it in the fridge to set and harden overnight. When ready, cut the gummies into small squares ready to be skewered.

When you’re ready to make the lunchbox skewers, cut the fruit up into chunks or cute shapes that will easily fit on the skewers – sometimes I make a little rocket as it looks super cool and the little peeps love them.

Three to four skewers is a good snack amount.

Pop the skewers straight into an airtight lunchbox in a cooler bag with an ice block to keep it nice and cool.
