Pasta is super versatile, easy to cook and fast. This pasta salad is all about basil, bocconcini and balsamic … with a cherry (tomato) on top. What I love the most about this recipe is that your kids can choose their favourite pasta shapes and you really only need to assemble it. Over the years I’ve slightly adjusted this recipe to accommodate my girls’ changing tastebuds.

 

TIPS
Adding chicken breast pieces to this salad takes it to the next level, but always make sure it’s refrigerated well when packing a school lunch. You can use a simple Italian dressing instead of balsamic if you like – do what works best for your family.

Gluten free
To make this gluten free, simply sub in your favourite gluten-free pasta.

Dairy free
You can use a plant-based bocconcini to make this pasta salad dairy free.

dried pasta of your choice

cherry tomatoes
237 ml
bocconcini, drained
79 ml
basil leaves
15 ml
extra-virgin olive oil
30 ml
balsamic vinegar

1 cup
cherry tomatoes
1 cup
bocconcini, drained
1/3 cup
basil leaves
1 tablespoon
extra-virgin olive oil
2 tablespoons
balsamic vinegar

Directions

Putting the water on to boil is the hardest part of this recipe.

Add the salt to the water before you start heating it, then follow the packet instructions for cooking times. Once the pasta is cooked, drain it really well and leave it to cool (remember that this is a cold pasta salad so there’s no rush).

Place the tomatoes, bocconcini and basil in a mixing bowl.

As soon as the pasta has cooled down, toss it through the salad with tongs. Add the olive oil and balsamic for the final touch.

When I put this dish in a lunchbox, I like to place a basil leaf on top – that’s what wins me parent awards with the kids.
